Maple Mountain New York Quinoa

Maple Vinaigrette Penne Pasta

This recipe is a quick, easy meal that can be enjoyed any day of the week.


Makes about 8 servings


Ingredients


1-16oz box of Penne Pasta

1 cup Sweet Corn Kernels


1 cup Cut Green Beans


1 cup Diced Tomatoes


About 1/4 cup (to taste) Maple Mountain New York Maple Vinaigrette plus more to add after serving


Shredded Cabot New York Extra Sharp Cheddar Cheese for topping



Method


Cook Penne Pasta according to package directions. Meanwhile add remaining ingredients to a seperate sauce pan with 2 tablespoons of the Maple Mountain New York Maple Vinaigrette. Simmer until vegetables are at the desired tenderness. Toss vegetable mixture, pasta, and remaining dressing together. Just before serving top with freshly shredded Cabot New York Extra Sharp Cheddar Cheese. Serve with additional dressing on the side.

Ingredients


6- 8 Small New Red Potatoes Sliced


1 bunch of Asparagus

1 medium Sweet Onion cut into large slivers


1/2 head of Broccoli cut florets


1/2 head of Cauliflower cut florets


About 1/4 cup (to taste) Maple Mountain New York Maple Vinaigrette plus more to add after serving


Method


Wash and prepare all vegetables. Drain to remove as much water as possible. Place all vegetables into either a large Ziploc bag or bowl. Toss with Maple Mountain Maple Vinaigrette to coat. 


Oven

Place vegetables on a foil lined baking sheet. Roast vegetable at 400 degrees for about 40-45 minutes or until tender. Stir occasionally to prevent over browning. Drizzle additional Maple Mountain Maple Vinaigrette to taste.


Grill

Place vegetables on a sheet of foil large enough to form a pouch. Seal the pouch by folding the edges together. Place on the grill and cover. Cook for about 30 minutes then open pouch and continue cooking until tender.

Drizzle additional Maple Mountain Maple Vinaigrette to taste.

This recipe is for the salad we have served at many events to introduce our Maple Vinaigrette dressing.


Makes about 16 servings


Ingredients


1-16oz bag of mixed salad greens (baby lettuces and greens)

2 pints of strawberries, sliced

3 cups finely shredded jack cheese

1 cup (or more) chopped walnuts

1/2 to 3/4 cup Maple Mountain New York Maple Vinaigrette plus more to add after serving


Method

In a large mixing bowl add the mixed salad greens with shredded jack cheese and toss. Just before serving add the Maple Mountain New York Great Maple Vinaigrette Dressing to lightly coat. Toss in the strawberries and walnuts. Serve with additional dressing on the side.


Makes about 4 servings


Ingredients


2 cups quinoa


1 tbsp. Maple Mountain New York Maple Vinaigrette plus more to add after serving

4 cups chicken broth


1 cup fresh or frozen peas


Method


Place quinoa in a large sauce pan then add the Maple Mountain Maple Vinaigrette and stir to coat. Next add Chicken Broth and bring to a boil. Add in the peas then reduce the heat, cover, and simmer for about 15 minutes or until the liquid is absorbed and the quinoa has softened.


Scoop the quinoa and peas into bowls and drizzle with additional Maple Mountain Maple Vinaigrette to taste over the top just prior to serving.
