Ingredients
2 cups quinoa
1 tbsp. Maple Mountain New York Maple Vinaigrette plus more to add after serving
4 cups chicken broth
1 cup fresh or frozen peas
Method
Place quinoa in a large sauce pan then add the Maple Mountain Maple Vinaigrette and stir to coat. Next add Chicken Broth and bring to a boil. Add in the peas then reduce the heat, cover, and simmer for about 15 minutes or until the liquid is absorbed and the quinoa has softened.
Scoop the quinoa and peas into bowls and drizzle with additional Maple Mountain Maple Vinaigrette to taste over the top just prior to serving.
