Maple Vinaigrette Penne Pasta

This recipe is a quick, easy meal that can be enjoyed any day of the week.

Makes about 8 servings


1-16oz box of Penne Pasta

1 cup Sweet Corn Kernels

1 cup Cut Green Beans

1 cup Diced Tomatoes

About 1/4 cup (to taste) Maple Mountain New York Maple Vinaigrette plus more to add after serving

Shredded Cabot New York Extra Sharp Cheddar Cheese for topping


Cook Penne Pasta according to package directions. Meanwhile add remaining ingredients to a separate sauce pan with 2 tablespoons of the Maple Mountain New York Maple Vinaigrette. Simmer until vegetables are at the desired tenderness. Toss vegetable mixture, pasta, and remaining dressing together. Just before serving top with freshly shredded Cabot New York Extra Sharp Cheddar Cheese. Serve with additional dressing on the side.
